{"id":154,"date":"2012-05-18T15:58:11","date_gmt":"2012-05-18T05:58:11","guid":{"rendered":"http:\/\/bellabuy.com.au\/blog\/?p=154"},"modified":"2012-05-18T15:58:11","modified_gmt":"2012-05-18T05:58:11","slug":"veal-leek-pie","status":"publish","type":"post","link":"https:\/\/bellabuy.com.au\/blog\/food\/veal-leek-pie\/","title":{"rendered":"Veal &#038; Leek Pie"},"content":{"rendered":"<p>There is nothing better than comfort food in the cooler months\u2026 and my number one meal that comes under that banner and that will ensure a happy tummy is a homemade pie!<\/p>\n<p>Lucky for me, my newly purchased cook book \u2018Relaxed Cooking with Curtis Stone\u2019 has the yummiest Chicken &amp; Leak Pie which I just had to try for the family!<\/p>\n<p>However, if you\u2019re anything like me, I\u2019m not one to stick to the recipe and usually do a lot of substituting depending on what leftovers need to be eaten.<\/p>\n<p>So here is my version of Curtis\u2019s yummy pie\u2026<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>500g diced veal (yep\u2026 you read correctly. Feel free to use chicken though)<\/li>\n<li>\u00bd cup rice flour<\/li>\n<li>olive oil<\/li>\n<li>sea salt &amp; pepper to taste<\/li>\n<li>25g butter<\/li>\n<li>1 onion finely diced<\/li>\n<li>1 leek finely diced (white &amp; pale green parts only)<\/li>\n<li>3 celery sticks finely diced<\/li>\n<li>1 cup button mushrooms sliced<\/li>\n<li>1 Tbsp wholegrain mustard<\/li>\n<li>1\u00bd cups chicken stock<\/li>\n<li>\u00be cup full cream milk<\/li>\n<li>\u00bc cup cream<\/li>\n<li>a handful finely chopped fresh tarragon<\/li>\n<li>1 sheet frozen puff pastry thawed<\/li>\n<\/ul>\n<h3>Steps<\/h3>\n<ol>\n<li>Dust veal with \u00bd the rice flour &amp; salt &amp; pepper<\/li>\n<li>Heat oil in a heavy based saucepan and cook veal on high until meat is sealed and just cooked through (5-10mins)<\/li>\n<li>Remove veal from pan and add butter, onion, leak and celery and saut\u00e9 for 5mins<\/li>\n<li>Add mushrooms to pan, along with mustard and remaining rice flour and stir on low heat for a few minutes<\/li>\n<li>Slowly stir in chicken stock, milk and cream on low heat and allow sauce to thicken and simmer<\/li>\n<li>Add veal and tarragon and season to taste with salt &amp; pepper<\/li>\n<li>Set aside to cool and then refrigerate to cool completely<\/li>\n<li>Transfer the pie mixture into a 6-cup capacity baking dish<\/li>\n<li>Roll out the puff pastry over the baking dish and seal to the edges<\/li>\n<li>Cut slits into the pastry to allow steam to escape and bake at 180C for 50mins or until the pastry is golden in colour<\/li>\n<li>Serve with a green salad and smile!<\/li>\n<\/ol>\n<div><a href=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-217\" title=\"signoff-n\" src=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png\" alt=\"\" width=\"151\" height=\"54\" srcset=\"https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png 151w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n-150x54.png 150w\" sizes=\"auto, (max-width: 151px) 100vw, 151px\" \/><\/a><\/div>\n<p><a href=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/vealpie.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-155\" title=\"vealpie\" src=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/vealpie.png\" alt=\"\" width=\"603\" height=\"224\" srcset=\"https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/vealpie.png 603w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/vealpie-300x111.png 300w\" sizes=\"auto, (max-width: 603px) 100vw, 603px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There is nothing better than comfort food in the cooler months\u2026 and my number one meal that comes under that banner and that will ensure a happy tummy is a homemade pie!
