Walnut Cake"},"content":{"rendered":"<p>This recipe was given to me by one of my mother\u2019s group friends at one of our very first meetings\u2026 it is so quick and simple to make that it\u2019s great for when you are time poor, or have run out of butter and have too many apples in the fruit bowl ~ which was the case for me this weekend.<\/p>\n<h4>Ingredients<\/h4>\n<ul>\n<li>2 cups plain flour<\/li>\n<li>1tsp bicarbonate of soda<\/li>\n<li>\u00bd tsp ground nutmeg<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>3 eggs<\/li>\n<li>\u00bc cup caster sugar<\/li>\n<li>1\u00bd cups of brown sugar (tightly packed)<\/li>\n<li>\u00bc cup water<\/li>\n<li>\u00bd cup light olive oil<\/li>\n<li>1\u00bd tsp vanilla extract<\/li>\n<li>1 cup of walnuts (approx. 140g) coarsely chopped (or pecans if you prefer)<\/li>\n<li>5 apples peeled &amp; cut into 1cm pieces (pears can be used as an alternative or approx. 10 canned pear halves well-drained)<\/li>\n<li>Icing sugar for dusting<\/li>\n<\/ul>\n<h4>Steps<\/h4>\n<ol>\n<li>Preheat the oven to 150C<\/li>\n<li>Butter or spray a non-stick round cake dish (preferably fluted as the cake will only take 1hr to cook\u2026 much quicker!)<\/li>\n<li>Whisk together the flour, bicarb, spices and salt in a bowl<\/li>\n<li>In a separate bowl whisk up the 3 eggs and add the sugars, water, oil and vanilla extract and mix together thoroughly<\/li>\n<li>Combine the 2 mixtures together slowly then add the nuts and fold through and finally fold through the apples or pears<\/li>\n<li>Pour the mixture into your cake tin and cook on 150C for 1hr and 30mins or until a skewer inserted into the middle of the cake comes out clean.<\/li>\n<li>Allow to cool for 10mins in the tin and then turn out and sprinkle with icing sugar<\/li>\n<\/ol>\n<p>Oh smell the spicy aroma wafting through the house\u2026 might just have to enjoy a little slice now!<\/p>\n<p>This cake can also be frozen for up to 2 weeks and heated up as a yummy pudding with custard!<\/p>\n<p><a href=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-217\" title=\"signoff-n\" src=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png\" alt=\"\" width=\"151\" height=\"54\" srcset=\"https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n.png 151w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/signoff-n-150x54.png 150w\" sizes=\"auto, (max-width: 151px) 100vw, 151px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/applecake1.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-178\" title=\"applecake\" src=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/applecake1.png\" alt=\"\" width=\"377\" height=\"399\" srcset=\"https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/applecake1.png 377w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/05\/applecake1-283x300.png 283w\" sizes=\"auto, (max-width: 377px) 100vw, 377px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe was given to me by one of my mother\u2019s group friends at one of our very first meetings\u2026 it is so quick and simple to make that it\u2019s great for when you are time poor, or have run out of butter and have too many apples in the fruit bowl ~ which was [&hellip;]<\/p>\n","protected":false},"author":3,"featured_media":178,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[4],"tags":[],"class_list":["post-172","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-food"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v25.3.1 - https:\/\/yoast.com\/wordpress\/plugins\/seo\/ -->\n<title>Quick Apple &amp;
