I had purchased fresh mint the day before to make grilled chicken kofta\u2019s which got me thinking how I could use both these ingredients to make a quick, healthy meal to make &amp; enjoy after a gruelling training session. Taste.com delivered yet again \u2013 so ladies (and gents) I present to you\u2026<\/p>\n<h3>Chicken, Pea &amp; Mint Risoni Salad<\/h3>\n<ul>\n<li>2 x chicken breasts<\/li>\n<li>\u00be cup chopped mint leaves<\/li>\n<li>1 \u00bd cup risoni<\/li>\n<li>1 cup peas (frozen is fine)<\/li>\n<li>300g-500g feta<\/li>\n<li>\u00bd red onion, finely chopped<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>2 tablespoons olive oil<\/li>\n<\/ul>\n<h3>Steps<\/h3>\n<ol>\n<li>Lightly spray frying pan with olive oil and place over low-medium heat.
