{"id":367,"date":"2012-08-12T16:17:47","date_gmt":"2012-08-12T06:17:47","guid":{"rendered":"http:\/\/bellabuy.com.au\/blog\/?p=367"},"modified":"2012-08-12T16:17:47","modified_gmt":"2012-08-12T06:17:47","slug":"winter-chicken-soup","status":"publish","type":"post","link":"https:\/\/bellabuy.com.au\/blog\/food\/winter-chicken-soup\/","title":{"rendered":"Winter Chicken Soup"},"content":{"rendered":"<p>Getting over the flu is never nice\u2026 one thing that does make me feel a whole lot better though is my mum\u2019s comforting chicken soup.<\/p>\n<p>The best part is that it is so simple and quick to make that you can be sick and still manage to cook some up in no time!<\/p>\n<p><a href=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/08\/chickensoup1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-368\" title=\"chickensoup\" src=\"http:\/\/bbprdv2.bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/08\/chickensoup1.jpg\" alt=\"\" width=\"480\" height=\"643\" srcset=\"https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/08\/chickensoup1.jpg 800w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/08\/chickensoup1-224x300.jpg 224w, https:\/\/bellabuy.com.au\/blog\/wp-content\/uploads\/2012\/08\/chickensoup1-764x1024.jpg 764w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1 Tbsp butter<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>2 cloves garlic<\/li>\n<li>1 onion diced<\/li>\n<li>3 x carrots diced<\/li>\n<li>3 or more celery sticks diced<\/li>\n<li>1 whole free range or organic chicken<\/li>\n<li>1 x bay leaf<\/li>\n<li>200g barley<\/li>\n<li>\u00bd bunch of parsley chopped<\/li>\n<li>2 litres of good quality chicken stock<\/li>\n<li>salt &amp; pepper to season<\/li>\n<li>squeeze of lemon to serve<\/li>\n<\/ul>\n<h3>Steps<\/h3>\n<p>1. In a large saucepan on medium heat, brown the onions, garlic, carrots and celery in the butter and olive oil<br \/>\n2. Add the whole uncooked chicken, bay leaf, barley and chicken stock and bring to the boil<br \/>\n3. Skim off any fat from the top of the saucepan<br \/>\n4. Allow to boil for 30- 45mins<br \/>\n5. Take the whole chicken out of the soup and once cool, shred the meat away from the carcass and put this back into the soup<br \/>\n6. Add the chopped parsley, salt &amp; pepper to taste<br \/>\n7.
