Super Easy Minestrone Soup

I love nothing more in the cooler months than a nice big pot of soup, packed full of veggies. I’ve been cooking this minestrone since my little girl was a baby, it was her staple diet for a good while there.

It’s quick, easy and very tasty. Best of all, I can puree it and store it in the freezer for baby food. Two birds and all that.

Ingredients

  • 1 garlic clove, crushed
  • 1 onion, chopped finely
  • 1 bunch of celery, chopped
  • 6 carrots, peeled and chopped*
  • 2 potatoes, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • 1 400g tin of crushed tomatoes
  • 1L beef stock
  • 2-3 cups of water
  • 1 cup of pasta

Steps

  1. Place garlic and onion in a large pan and cook on high for about 2 mintues
  2. Place carrots, celery and potato in the pan and cook on high for a further 5 mintues
  3. Add the tinned tomatoes, beef stock and about half of the water, stir and bring to the boil
  4. Reduce the heat to low, cover and simmer for around half an hour
  5. Add pasta and the rest of the water if needed – cook on high for a further 10 minutes

*I know I went a bit overboard with the carrots, but I have a fussy 2 year old who really likes them!!
